petite chocolate cake.

i was browsing pinterest today in search of a quick chocolate fix that wouldn’t leave me wanting to run my stairs 3.5 million times. i came across a recipe for an easy chocolate cake for one. this intrigued me. you see if there is an entire pan of chocolate cake sitting there i will saunter by all day for a quick taste here and there and then truly want to climb those stairs. so cake for one it would be.

i modified this recipe to fit my own nutritional goals and wanted to share below. what’s even better? this gorgeous little dessert is dairy free, sugar free, and free of eggs. (oh and if you try a gluten-free variety and enjoy it, please let me know!)

gather the following:

  • 2 tablespoons flour
  • 1 tablespoon agave nectar
  • 2 teaspoons unsweetened cocoa powder
  • 1/4 teaspoon baking powder
  • pinch salt (himalayan pink for us)
  • 2 tablespoons almond milk (unsweetened)
  • 1 teaspoon coconut oil
  • drop of vanilla extract
  • cute ramekin

wipe your little ramekin with some coconut oil and add in the dry ingredients. then stir the remaining items until smooth and pop into the microwave for 35 seconds. perhaps 40 but no more. you want it to be moist and yummy.

that’s it.

seriously. it’s rich and smooth, delicious and totally hits the spot on a crazy afternoon. or evening. or morning, who cares.

we enjoyed our petite cakes with a game of skip-bo today, then nancy (ned’s wife) got hungry and i was unable to document the remainder of our day;)she’s sneaky like that.

Beth - The cake looks delicious, but its the box creature that really caught my eye. It is awesome!
